Recipe: Fireside Turkey Bacon Bagel

With the holidays upon us, it is time to break out the easy to make finger food for your next gathering. Of course, this recipe can also be used as a great snack for your kids, fun lunch for you, your kids, and your spouse, or even a potluck gathering!

Our Fireside Turkey, also known as Fireside, is marinated and rubbed with extra virgin olive oil, chipotle, ancho, and guajillo chilis. We then cook with light hardwood smoke to represent the cuisine of the American Southwest. A harmony of flavors which will not crush you with spice or smoke. It also goes well with sharp cheeses for your next party or appetizer platter, or even bacon and avocado, like this recipe, but for a breakfast quiche or omelet.

Fireside Turkey Bacon Bagel

-makes 6 bagels

Ingredients

1 lb. Farmers & Cooks Sliced Fireside Turkey
12 slices crispy bacon
6 Mini Bagels
4 oz. Crème Fraiche or Sour Cream
2 large Heirloom Tomatoes (or other tomato)
½ Red Onion
2 Avocados
¼ bunch Cilantro, chopped
2 limes
Cilantro Leaves
Salt

Prep

Cook bacon until crispy.
Dice tomatoes into slices.
Cut red onion into small minced pieces.
Dice avocado into slices.
Juice one lime into bowl with Crème Fraiche or sour cream
Whisk Crème Fraiche (or sour cream) and lime juice together until thick and airy.
In another bowl, mix together tomatoes, onion, avocado, cilantro and lime juice. Let this salsa marinade for 15 minutes before draining liquid.

Assembly

Layer Fireside turkey evenly over bagels.
Break a strip of bacon in half and lay it crisscross on top of the turkey.
Top with salsa, a dollop of lime crème fraiche and fresh cilantro leaves.
